A creamy and nutritious butternut squash soup recipe, perfect for chilly days.

Ingredients

  • 2 butternut squashes, peeled and cubed
  • 1 large onion, chopped
  • 4 cloves of garlic, roasted
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash and onion with olive oil, salt, and pepper.
  3. Spread them evenly on a baking sheet and roast for about 25-30 minutes until soft.
  4. In a large pot, combine the roasted butternut squash, onion, roasted garlic, vegetable broth, cumin, cinnamon, and nutmeg.
  5. Bring to a simmer and cook for about 10-15 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Adjust seasoning with salt and pepper if necessary.
  8. Serve warm and enjoy the flavors of fall!
