A crunchy and cheesy burrito that combines grilled cheese with bold taco flavors, featuring seasoned beef, rice, and gooey cheeses, all in a crispy crust.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning, or homemade blend
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: Brown 1 lb ground beef in a skillet over medium heat for 8–10 minutes until crumbly and slightly crispy. Drain excess grease, then add taco seasoning and 1/4 cup water, simmer for 5 minutes.
  2. Warm the Tortillas: Heat tortillas on a dry skillet or microwave for 15–20 seconds until pliable.
  3. Assemble the Burrito: Lay a tortilla flat and layer with 1/4 cup rice, 1/4 of the seasoned beef, 2 tbsp nacho cheese, 1 tbsp chipotle sauce, 2 tbsp sour cream, and sprinkle shredded cheddar and mozzarella.
  4. Grill the Burrito: Heat a clean skillet, sprinkle 2 tbsp shredded cheese where the burrito will rest, place seam-side down and cook until golden and crispy, 3–4 minutes per side.

Notes

For lower sodium, swap taco seasoning with 2 tbsp homemade mix. Use pre-shredded cheese for better melt.
