A gourmet grilled beef tenderloin sandwich featuring tender beef, savory mushrooms, fresh spinach, and a spicy aioli.

Ingredients

  • 3 tablespoons spicy mustard
  • ¼ cup honey
  • 1 garlic clove, minced
  • ½ cup mayonnaise
  • Kosher salt and fresh ground pepper to taste
  • 1 pound beef tenderloin, trimmed of fat
  • 5 large mushrooms, cleaned and sliced
  • 1 large Vidalia onion, cut into ½ inch slices
  • 1 cup baby spinach
  • ¼ cup blue cheese, crumbled
  • 1 ciabatta loaf, split lengthwise
  • 3 tablespoons extra virgin olive oil

Instructions

  1. In a mini food processor, combine the spicy mustard, honey, garlic, and mayonnaise.
  2. Season the aioli with salt and pepper to taste and let it sit for 30 minutes to allow the flavors to develop.
  3. Coat the beef tenderloin with 1 tablespoon of olive oil, seasoning it liberally with kosher salt and pepper.
  4. Grill the tenderloin over medium-high heat, turning occasionally for about 20 minutes until it reaches medium-rare.
  5. Place the seasoned onions and mushrooms on the grill and cook for 5-7 minutes until they soften.
  6. Brush the cut sides of the ciabatta with olive oil and grill, cut side down, for about 5 minutes until charred.
  7. To assemble, slice the beef into ½ inch pieces, brush aioli on both sides of the ciabatta, and layer with grilled onions, beef, mushrooms, blue cheese, and spinach.
  8. Cut the sandwich into four portions and serve immediately.

Notes

For a vegetarian option, substitute the beef with grilled portobello mushrooms.
