A fresh and vibrant green sauce packed with flavor, perfect for enhancing a variety of dishes.

Ingredients

  • 1.25 lbs tomatillos, husked, rinsed, and quartered
  • 2 small yellow onions, cut into 1-inch wedges
  • 4 cloves garlic, peeled
  • 1 jalapeño pepper, left whole or without seeds
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/8 teaspoon sugar
  • 3/4 cup packed fresh cilantro leaves, with extra for serving

Instructions

  1. Set the oven rack about 5 inches beneath the heating element and preheat the broiler.
  2. Line a rimmed baking sheet with heavy-duty aluminum foil.
  3. Place the tomatillos, onions, garlic, and jalapeño on the baking sheet.
  4. Toss the vegetables with olive oil until evenly coated.
  5. Broil for 10-12 minutes until softened and slightly charred.
  6. Transfer the roasted vegetables and juices to a food processor.
  7. Add salt, cumin, sugar, and cilantro, then pulse until chunky.
  8. Taste and adjust seasoning, if necessary.
  9. Serve warm, at room temperature, or chilled.
