These Greek Yogurt Brownies are rich, fudgy, and packed with protein. A healthier twist on the classic treat using Greek yogurt instead of butter.
1 cup plain Greek yogurt
1/2 cup unsweetened cocoa powder
1/2 cup coconut sugar or monk fruit sweetener
2 large eggs
1/2 cup oat flour
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/4 cup dark chocolate chips (optional)
1. Preheat oven to 350°F (175°C). Grease or line an 8×8 inch pan.
2. In a bowl, mix Greek yogurt, cocoa, sweetener, eggs, and vanilla.
3. Add oat flour, baking soda, and salt. Mix until smooth.
4. Fold in chocolate chips if using.
5. Pour batter into pan and smooth the top.
6. Bake for 20–24 minutes or until center is set.
7. Cool completely before cutting into squares.
Store in fridge up to 5 days or freeze for 2 months.
