A creamy and savory Beef Stroganoff with seared beef, mushrooms, and a rich sauce, typically served over egg noodles.

Ingredients

  • 400 to 500 g sirloin or ribeye beef, sliced
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 250 g mushrooms, sliced
  • 240 ml beef broth
  • 150 g sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 5 g fresh parsley, chopped (for garnish)
  • Egg noodles or rice (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add sliced beef and cook until browned, about 2 to 3 minutes per side.
  2. Remove beef and set aside. In the same skillet, add sliced onion and minced garlic, cooking for 3 to 4 minutes until fragrant.
  3. Add mushrooms and sauté for 4 to 5 minutes until soft and lightly browned.
  4. Pour in beef broth and bring to a simmer, scraping brown bits from the pan for 2 to 3 minutes.
  5. Reduce heat to low and stir in sour cream and Dijon mustard. Season with salt and pepper.
  6. Return the beef to the skillet and cook for 1 to 2 minutes until heated through.
  7. Serve over cooked egg noodles or rice and garnish with chopped parsley.

Notes

For a lighter dish, reduce sour cream by 50 g and use low-fat broth. For a richer sauce, add butter at the end.
