Deliciously spiced gingerbread cookies filled with creamy frosting, perfect for holiday celebrations.

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup coconut oil, melted
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • Vegan frosting for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together gluten-free flour, baking powder, ginger, cinnamon, cloves, and salt.
  3. In another bowl, whisk melted coconut oil, brown sugar, maple syrup, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet and mix until well combined.
  5. Roll the dough into balls, then flatten them slightly and place them on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until edges are firm.
  7. Allow to cool completely.
  8. Spread vegan frosting on one cookie and sandwich with another. Serve and enjoy!

Cookies can be stored in an airtight container at room temperature for up to a week.
