Garlic Parmesan Chicken Pasta

A crowd-pleasing weeknight meal featuring pan-fried chicken, creamy garlic sauce, and Parmesan cheese in one skillet, ready in about 30 minutes.

Ingredients

  • 400 g pasta
  • 300 g chicken breast
  • 1 tbsp cornflour
  • 1 tsp garlic powder
  • 200 mL cream
  • 50 g grated Parmesan
  • 250 mL chicken stock
  • 1 lemon, juiced
  • Chopped parsley

Instructions

  1. Cook the pasta according to package instructions, reserving 250 mL of the cooking water, then drain.
  2. Coat chicken with cornflour and season with salt, pepper, and garlic powder.
  3. In a large frying pan, heat oil and fry chicken for 6-7 minutes until golden, then hold warm.
  4. Sauté onion until softened, then add garlic and cook for 1 minute.
  5. Add stock and cream, simmer for 3 minutes until slightly thickened, then stir in lemon juice.
  6. Add the pasta and sprinkle over the Parmesan, tossing with tongs until coated, adding reserved water as needed for consistency.
  7. Return chicken to the pan, warm for 1 minute, then serve topped with parsley and extra Parmesan.

Notes

Leftovers can be refrigerated for 2-3 days. Reheat gently on the stove with a bit of water. For meal prep, separate sauce and pasta.
