A hearty and nourishing blend of chickpeas, garlic, and assorted vegetables simmered in vegetable broth, perfect for any season.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 carrot, chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and carrots; sauté until softened, about 5-7 minutes.
  3. Add minced garlic and cumin; cook for another minute until fragrant.
  4. Stir in chickpeas and vegetable broth; bring to a boil and reduce to a simmer for 15-20 minutes.
  5. Season with salt and pepper after removing from heat.
  6. Use an immersion blender to partially blend the soup.
  7. Serve hot, garnished with fresh parsley.
