Delightful egg muffins combining fresh peppers and creamy feta cheese, perfect for a nutritious breakfast or brunch.

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 2 cups diced red bell pepper
  • 1/2 cup chopped scallions
  • 9 large eggs
  • 1 garlic clove, finely grated
  • Heaping 1/2 teaspoon sea salt
  • Freshly ground black pepper to taste
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/3 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease a nonstick muffin tin with olive oil and evenly divide the peppers and scallions among the muffin cups.
  3. In a large bowl, whisk the eggs along with the grated garlic, sea salt, and freshly ground black pepper.
  4. Sprinkle flour and baking powder on top and whisk well until combined.
  5. Divide the egg mixture evenly into the muffin cups, using about a scant 1/4 cup in each.
  6. Finally, sprinkle crumbled feta on top of each muffin cup.
  7. Bake for 22 to 24 minutes, or until the eggs are set and slightly golden.
  8. Let cool before removing from the pan to avoid crumbling.
