Ingredients

Scale
  • 4 cups (480 g) cinnamon swirl bread, cubed
  • 2 cups (480 ml) eggnog
  • 3 large eggs (150 g)
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp (5 ml) vanilla extract
  • 1 tsp (2 g) ground cinnamon
  • 1/4 tsp (0.5 g) ground nutmeg
  • Pinch of salt
  • 3 tbsp (42 g) melted butter
  • Optional: 1/2 cup (75 g) raisins or dried cranberries
  • Optional: 1/2 cup (60 g) chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or spray.
  2. Whisk eggnog, eggs, sugar, vanilla, cinnamon, nutmeg, and salt in a large bowl until combined.
  3. Place cinnamon swirl bread cubes in the baking dish; sprinkle raisins or nuts if using.
  4. Pour eggnog mixture evenly over the bread, pressing gently to soak all pieces.
  5. Drizzle melted butter over the top.
  6. Let sit for 10-15 minutes to allow absorption.
  7. Bake for 40-45 minutes, until the top is golden and a knife inserted in the center comes out clean.
  8. Cool for 10 minutes, then serve warm with powdered sugar or whipped cream.

Notes

Using day-old bread increases absorption and provides a custardy interior without sogginess.
