A high-protein, creamy, and wholesome breakfast bake made with eggs, cottage cheese, and fresh spinach. Perfect for meal prep or a weekend brunch.
8 large eggs
1 cup cottage cheese
2 cups fresh spinach, chopped
1/2 cup shredded mozzarella (optional)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
Olive oil spray or butter for greasing
1. Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish with olive oil spray or butter.
2. In a large mixing bowl, whisk the eggs until smooth.
3. Fold in the cottage cheese, spinach, mozzarella (if using), salt, pepper, and garlic powder.
4. Pour the mixture into the prepared baking dish and spread evenly.
5. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
6. Remove from the oven and allow to cool for 5 minutes before slicing and serving.
You can substitute spinach with kale, arugula, or Swiss chard.
For extra flavor, sauté spinach with garlic before adding it to the mix.
This bake can be stored in the fridge for up to 4 days or frozen for up to 2 months.
