A creamy delight that combines tender chicken, hearty beans, and zesty spices, enhanced by the richness of cream cheese.

  • 1 lb raw chicken breasts
  • 2 cans white beans, drained
  • 1 can corn, drained
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 jalapeño pepper, diced
  • 2 tbsp taco seasoning
  • 1/2 cup fresh cilantro
  • 1 packet ranch seasoning
  • 8 oz cream cheese
  • 1 lime, juiced
  • 4 cups chicken broth

Instructions

  1. Spray or brush the inside of your crockpot with olive oil for easy cleanup.
  2. Place the raw chicken breasts inside the crockpot using tongs to avoid burns.
  3. Add in the beans, corn, garlic, diced onions, and jalapeno pepper.
  4. Sprinkle taco seasoning, fresh cilantro, and ranch seasoning over the top.
  5. Place cream cheese on top of the mixture.
  6. Pour lime juice and chicken broth over all ingredients, ensuring everything is moistened.
  7. Combine briefly without disturbing the cream cheese too much.
  8. Set the crockpot to low and cook for 6-8 hours, or on high for 3-4 hours.
  9. After cooking, remove the chicken, shred it with forks or a hand mixer, and return to the crockpot.
  10. Stir well to combine before serving.

Notes

This recipe is versatile; try adding more jalapeños for spice or substitute chicken with tofu for a vegetarian version.
