Ingredients

  • 4 tablespoons (56 g) unsalted butter
  • 4 ounces (113 g) semi-sweet chocolate
  • 1 teaspoon espresso powder
  • 2 tablespoons (25 g) granulated sugar
  • 2 tablespoons (25 g) packed brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons (15 g) all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Grease two 6-ounce ramekins with butter or nonstick baking spray and place on a baking sheet.
  3. In a microwave-safe bowl, combine butter and semi-sweet chocolate. Microwave in 20-second increments, stirring until melted.
  4. Whisk in espresso powder, granulated sugar, brown sugar, egg, egg yolk, and vanilla extract until smooth.
  5. Gently fold in all-purpose flour and salt until just combined.
  6. Divide batter among prepared ramekins.
  7. Bake for 11-12 minutes until tops are puffed, edges firm, but center remains jiggly.
  8. Cool for 1 minute, then invert onto plates. Serve immediately with chocolate shavings or berries if desired.

Notes

For variations, you can substitute all-purpose flour with gluten-free flour or add a spoonful of nut butter in the center.
