A simple and delicious Italian-style baked chicken breast, juicy and full of flavor, perfect for weeknight dinners.

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 medium onion, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh parsley and basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat chicken breasts dry, then pound to an even thickness.
  3. Season with salt, pepper, garlic, olive oil, lemon juice, and Italian seasoning.
  4. Grease a baking dish, spread onion slices at the base, and place the seasoned chicken on top.
  5. Scatter halved cherry tomatoes around the chicken.
  6. Cover the dish with aluminum foil and bake for 10 minutes.
  7. Remove the foil and bake for an additional 8 to 10 minutes until the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for 5 to 10 minutes; garnish with parsley and basil before serving.

Notes

Make sure to use a meat thermometer to check the chicken’s internal temperature. Letting the chicken rest enhances moisture retention.
