Creamy Garlic Butter Shrimp

A quick and flavorful dish featuring shrimp in a rich garlic butter sauce served over rice.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes, optional
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley, optional for garnish
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • Salt to taste, 1 tbsp butter for rice

Instructions

  1. In a medium saucepan, combine rice, water or broth, butter, and salt. Bring to a boil, reduce to low, cover, simmer for 18-20 minutes, then let rest for 5 minutes.
  2. Toss shrimp with salt, pepper, and paprika.
  3. Heat olive oil in a skillet over medium-high heat. Add shrimp in one layer and cook for 1-2 minutes per side until pink and opaque. Remove shrimp from skillet.
  4. Reduce heat, add butter and minced garlic to the skillet, sauté for 30 seconds until fragrant.
  5. Deglaze the pan with chicken broth, simmer for 2 minutes scraping browned bits. Stir in heavy cream and Parmesan, simmer for 3-5 minutes until slightly thickened.
  6. Add lemon juice, return shrimp to the skillet, toss to heat through, and serve over rice garnished with parsley.

Notes

For low-carb option, serve over cauliflower rice. Adjust red pepper flakes for spiciness.
