A bright, citrus-forward marinade that transforms chicken into juicy, herb-scented skewers in under 2 hours.

Ingredients

  • 2 lbs chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to create a homogeneous marinade.
  2. Add the chicken cubes to the marinade, making sure they are well coated.
  3. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill or oven to medium-high, about 375 to 425 F (190 to 220 C).
  5. Grill or bake the marinated chicken until fully cooked and golden brown, about 10 to 15 minutes.
  6. Serve with pita bread, tzatziki, and your choice of fresh vegetables.

Notes
