A hearty, creamy soup that combines browned ground beef, diced potatoes, and melted cheddar for a comforting weeknight meal.

Ingredients

  • 500 g ground beef
  • 900 g potatoes, diced (about 4 medium)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 L beef broth
  • 240 ml milk
  • 120 ml heavy cream
  • 200 g shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until no pink remains; drain excess fat.
  2. Add diced onion and minced garlic; cook until softened, about 3 minutes.
  3. Stir in diced potatoes and beef broth, then bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Stir in milk, heavy cream, and cheddar cheese until melted and combined.
  6. Season with salt and pepper to taste; serve hot garnished with parsley.

Notes

For a thicker soup, mash 1 cup of cooked potatoes against the pot wall and stir back in. Substitute ground beef with lentils for a vegetarian option.
