Buttery cookies filled with creamy dulce de leche and spiced with cinnamon, perfect for holiday trays and gift boxes.

Ingredients

  • 225 g all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 170 g unsalted butter, room temperature
  • 100 g granulated sugar
  • 100 g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 200 g dulce de leche, for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow cookies to cool completely.
  9. Sandwich two cookies together with a generous dollop of dulce de leche in between.
  10. Enjoy your sweet treat!

Notes

Chill dough for 15 minutes before shaping for neater rounds. For a vegan option, replace butter with solid coconut oil and use a flax egg.
