Red Velvet Molten Chocolate Lava Cookies blend soft cookie texture with a molten dark chocolate center for a luxurious treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1-2 tbsp red food coloring
  • 4 oz dark chocolate, chopped
  • Optional: 4 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with a mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and red food coloring until fully combined and glossy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined.
  6. If using, fold in the softened cream cheese gently.
  7. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  8. Scoop about 2 tablespoons (30g) of dough per cookie. Flatten slightly, place a chunk or two of chocolate in the center, then fold the dough around it to seal completely. Roll into a ball and place on the baking sheet about 2 inches apart.
  9. Bake for 10-12 minutes until edges are set but centers look soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill dough longer for thicker cookies and a hotter, gooier center. Store in an airtight container at room temperature for 2 days, or refrigerate up to 5 days. Reheat in microwave for gooey centers.
