  • 4 boneless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh lemon wedges for garnish

Instructions

  1. In a skillet over medium heat, heat olive oil.
  2. Season chicken breasts with salt, pepper, and oregano, and cook in the skillet for about 8 minutes on each side until golden brown and cooked through.
  3. Remove chicken and set aside.
  4. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
  5. Add cherry tomatoes, season with salt and pepper, and cook until they begin to burst.
  6. Mix in spinach and cook until wilted.
  7. Stir in heavy cream and Parmesan cheese; bring to a simmer and let reduce for 3 minutes.
  8. Return chicken to the skillet and heat through for 5 to 7 minutes.
  9. Garnish with fresh lemon wedges and serve warm.
