A savory dish combining tender chicken breasts with fresh spinach, mushrooms, and a creamy sauce for a wholesome weeknight meal.

Ingredients

  • 4 chicken breasts
  • 1 medium yellow onion
  • 4 tablespoons ghee (or butter)
  • 8 ounces mushrooms, sliced
  • 6 ounces fresh spinach
  • 6 ounces parmesan cheese, shredded
  • 1 cup heavy cream
  • 2 garlic cloves, minced
  • Salt/pepper/paprika (to taste)

Instructions

  1. If chicken breasts are thick, slice them in the middle for even cooking.
  2. Heat ghee in a deep skillet over medium heat. Fry chicken breasts for about 3-4 minutes until they start browning.
  3. Sprinkle with salt, pepper, and paprika, then flip and repeat. Cook for another 3-4 minutes until cooked through.
  4. Remove the chicken and keep warm on a plate.
  5. In the same skillet, add chopped onion, minced garlic, and sliced mushrooms. Sauté until mushrooms are soft.
  6. Add spinach and stir until it wilts down, reducing its volume by 3-4 fold.
  7. Pour heavy cream into the skillet, mix well, and add parmesan cheese once it starts to simmer.
  8. Return the chicken to the skillet, turn heat on low, and let simmer for a few minutes before serving.

Notes

To ensure juiciness, let the chicken rest before serving. Leftovers can be stored in an airtight container for up to 3 days.
