  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  3. Add fresh spinach and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and bring to a simmer, then add crumbled feta cheese.
  5. Add the cooked gnocchi to the skillet and stir to coat in the sauce.
  6. Season with salt and pepper to taste.
  7. Serve warm and sprinkle with Parmesan cheese if desired.
