A hearty, creamy chili made with tender chicken, savory spices, and white beans, perfect for chilly evenings.

Ingredients

  • 500 g boneless, skinless chicken breasts
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • Salt and pepper, to taste
  • 300 g corn
  • 1 onion, diced
  • 2 green chiles, diced
  • 400 g white beans, drained and rinsed
  • 500 ml chicken broth
  • Juice of 1 lime
  • 200 g cream cheese
  • 200 ml half-and-half

Instructions

  1. Place the chicken at the bottom of the slow cooker.
  2. Sprinkle cumin, chili powder, oregano, salt, and pepper over the chicken.
  3. Top with corn, diced onion, green chiles, and white beans.
  4. Add chicken broth and lime juice; stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-5 hours.
  6. Remove chicken, shred, and return to the pot.
  7. Stir in cream cheese and half-and-half until creamy.
  8. Set to warm until ready to serve.
