A quick and creamy chicken soup that is perfect for comfort and relief from cold symptoms.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 2 cups shredded chicken
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat, sauté onions until translucent (5-7 minutes).
  2. Add carrots and cook for another 5 minutes until they begin to soften.
  3. Pour in chicken broth and bring to a boil, then simmer for 5 minutes.
  4. Add egg noodles and cook according to package instructions.
  5. Stir in shredded chicken and heavy cream, season with salt and pepper, and heat through for 3-5 minutes.
  6. Simmer for 10 minutes until heated through and flavors meld.
  7. Garnish with fresh parsley before serving.

Notes

Temper the cream by adding a ladle of hot soup to the cream before stirring it back into the pot, to prevent curdling.
