A compact, citrus-sparked quick bread flavored with orange juice and zest, filled with fresh cranberries, perfect for gifting or brunch.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup orange zest
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together orange juice, orange zest, melted butter, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in chopped cranberries.
  5. Divide the batter into the prepared mini loaf pans.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.

Notes

Store at room temperature in an airtight container for 2 days, or refrigerate up to 5 days. Freezes well wrapped for up to 3 months.
