Delicious, chewy oat bars studded with dried cranberries and topped with a creamy orange glaze, perfect for the holidays.

  • 1 cup dried cranberries
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and white sugar until smooth.
  3. Beat in the vanilla extract and then gradually blend in the flour, oats, baking soda, and salt.
  4. Fold in the dried cranberries.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 25-30 minutes or until golden brown.
  7. Meanwhile, in a small bowl, mix the softened cream cheese, powdered sugar, and orange zest until smooth.
  8. Once the bars have cooled, spread the cream cheese mixture over the top.
  9. Cut into squares and serve.

Notes

For best results, chill the bars briefly before cutting for clean edges.
