2/3 cup full-fat cottage cheese
1/4 cup cocoa powder
1/4 cup sugar
1 egg
1/4 cup milk
1 tsp vanilla extract
2 tbsp melted butter
1/2 cup whole wheat flour
1/4 tsp baking soda
Pinch of salt
1/3 cup chocolate chips (regular + mini)
1. Preheat oven to 350°F and prepare a 9×9 baking pan.
2. Blend cottage cheese, melted butter, cocoa powder, sugar, egg, milk, and vanilla until smooth.
3. In a bowl, mix whole wheat flour, baking soda, and salt.
4. Combine the wet and dry ingredients.
5. Fold in chocolate chips.
6. Pour into baking dish and bake for 20–25 minutes.
7. Cool before slicing into 16 squares.
Store in an airtight container up to 4 days, or freeze for up to 2 months.
Use sugar-free chocolate chips for a lower sugar version.
