A fresh and vibrant mix of tomatoes, onions, jalapeños, and cilantro, perfect as a topping or dip.

Ingredients

  • 1 cup finely chopped white onion
  • 1 medium jalapeño or serrano pepper, seeded and finely chopped
  • 1/4 cup lime juice
  • 3/4 teaspoon fine sea salt
  • 1 1/2 pounds ripe red tomatoes, chopped
  • 1/2 cup finely chopped fresh cilantro

Instructions

  1. Combine the chopped onion, jalapeño, lime juice, and salt in a medium serving bowl.
  2. Let the mixture marinate for about 5 minutes.
  3. While it’s marinating, chop the tomatoes and cilantro.
  4. Add the chopped tomatoes and cilantro to the bowl. Stir well to combine.
  5. Taste and adjust seasoning, adding more salt as needed.
  6. For maximum flavor, let the mixture sit for 15 minutes or refrigerate for several hours before serving.
  7. Serve as a dip or topping, using a slotted spoon to avoid excess liquid.

Notes

Store in an airtight container in the refrigerator and consume within 2-3 days for best flavor.
