Ingredients

Scale
  • 300 g cooked chicken breast or thigh
  • 1.2 L low-sodium chicken broth
  • 200 g egg noodles
  • 1 medium onion, diced
  • 2 medium carrots, sliced (140 g)
  • 2 stalks celery, sliced (100 g)

  • 3 cloves garlic, minced
  • 1 tbsp soy sauce (optional)

Instructions

  1. In a large pot, sauté the diced onion, minced garlic, and grated ginger over medium heat until fragrant, about 3 minutes.
  2. Add the sliced carrots and celery, and cook for another 5 minutes until vegetables start to soften.
  3. Pour in the chicken broth and bring to a simmer, heating through and melding flavors for 5 to 7 minutes.
  4. Add the cooked chicken and egg noodles, and cook according to the noodles package instructions until tender, about 6 to 8 minutes.
  5. Season with salt, pepper, and soy sauce if using. Serve hot, garnished with green onions if desired.

Notes

Reserve a cup of hot broth and remove noodles if making leftovers to prevent sogginess.
