Cilantro Lime Chicken Bowls are a fast, flavor-packed weeknight dinner built on a rice base, topped with marinated chicken, black beans, corn, avocado salsa, and a creamy chipotle sauce.

Ingredients

  • Chicken thighs or breasts
  • Rice
  • Black beans
  • Corn
  • Avocado
  • Tomato
  • Onion
  • Jalapeno
  • Cilantro
  • Lime
  • Salt
  • Chipotle in adobo
  • Mayo or Greek yogurt
  • Olive oil
  • Garlic
  • Spices (cumin, paprika)

Instructions

  1. Whisk together ingredients for chicken marinade and add chicken. Marinate for at least 30 minutes.
  2. Prep rice by fluffing it and mixing in lime juice and chopped cilantro.
  3. Combine ingredients for avocado salsa and toss.
  4. Blend chipotle sauce ingredients until smooth and set aside.
  5. Preheat oven or air fryer to 400°F.
  6. Cook chicken until internal temperature reaches 165°F (20-25 min in oven, 14-18 min in air fryer).
  7. Let chicken rest for 5 minutes before slicing.
  8. Assemble bowls by layering rice, black beans, corn, avocado salsa, chicken, and chipotle sauce. Enjoy!

Notes

Leftovers can be stored in the refrigerator for up to 4 days; separate sauce and salsa. Cooked chicken can be frozen for up to 3 months.
