A delicious blend of churros and cheesecake baked into delectable bars that satisfy dessert cravings.

Ingredients

  • 250 g all-purpose flour
  • 100 g granulated sugar (for crust)
  • 1 tsp baking powder
  • ½ tsp salt
  • 115 g unsalted butter (melted)
  • 1 tsp ground cinnamon (for crust)
  • 450 g cream cheese (softened)
  • 100 g granulated sugar (for filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 50 g granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F. Line an 8×8 inch pan with parchment paper.
  2. In a bowl, combine flour, 100 g sugar, baking powder, salt, and 1 tsp cinnamon. Add melted butter and mix until sandy and clumpy.
  3. Press about two-thirds of the dough mixture into the bottom of the pan.
  4. In a mixing bowl, beat cream cheese and 100 g sugar until smooth. Add eggs one at a time, then vanilla. Mix until creamy.
  5. Spread cheesecake mixture over the crust.
  6. Crumble the remaining dough mixture over the cheesecake layer.
  7. Mix 50 g sugar with 1 tsp cinnamon in a small bowl and sprinkle over the top of the crumbled dough.
  8. Bake for 35–40 minutes, until edges are set and the center has a slight jiggle.
  9. Let cool completely, then refrigerate for at least 2 hours before slicing into bars.

Notes

Wrap tightly in plastic wrap or store in an airtight container. Will last in the refrigerator for up to 5 days, or freeze for up to 3 months.
