  • 1 can (400g) chickpeas, rinsed and drained
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 minced garlic clove
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Several grinds of black pepper
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup pickled red onions
  • 1/2 cup olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill
  • 1/4 cup chopped mint

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper to create the dressing.
  2. Toss in the rinsed and drained chickpeas, cherry tomatoes, cucumber, pickled red onions, and olives. Coat the vegetables well with the dressing.
  3. Mix in the chopped parsley, dill, and mint for added freshness.
  4. Adjust seasoning as needed, garnish with additional fresh mint leaves, and serve chilled or at room temperature.

Notes
