Chicken Fajita Nachos

A delicious fusion of chicken fajitas and nachos, perfect for game day or a cozy night in.

Ingredients

  • 1 and 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp fine sea salt
  • 1/2 tsp garlic powder
  • 1 tbsp avocado oil
  • 1/2 lb boneless, skinless chicken breasts
  • 2 bell peppers (thinly sliced)
  • 1 yellow onion (thinly sliced)
  • 1 lime
  • 6 oz tortilla chips
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Mix the cumin, paprika, salt, and garlic powder in a small bowl to create the seasoning blend.
  2. Heat avocado oil in a skillet over medium heat, add the chicken breasts, and sprinkle with the seasoning. Cook until golden brown, about 5-7 minutes per side.
  3. Add the thinly sliced bell peppers and onion to the skillet and sauté for 4-5 minutes.
  4. Preheat the oven to broil for about 5 minutes.
  5. On a baking sheet, spread out the tortilla chips, layer on the chicken and vegetable mixture, then sprinkle shredded cheddar cheese on top.
  6. Broil the baking sheet in the oven for 2-3 minutes, or until the cheese is bubbly and melted.
  7. Squeeze fresh lime juice over the nachos before serving.

Notes

Customize with black beans or mushrooms for a vegetarian option, use gluten-free chips if needed, and add jalapeños for some spice!
