Cheesy Ground Beef and Rice Skillet

A quick and easy one-pan meal featuring seasoned ground beef, rice, broth, and gooey cheese, perfect for family dinners and meal prep.

  • 1.5 pounds ground beef (80/20 recommended)
  • 1 cup uncooked long grain rice
  • 2 cups low sodium beef broth
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced
  • 2-3 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 tablespoon tomato paste
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Red pepper flakes (optional)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat, add ground beef, brown and break into crumbles, about 6 to 8 minutes.
  2. Push beef aside, add diced onion and bell pepper, sauté until softened, about 4 to 5 minutes.
  3. Stir in garlic, tomato paste, chili powder, cumin, oregano, cook for 1 minute.
  4. Add rice, stir to coat in oil and spices, for 1 to 2 minutes.
  5. Pour in beef broth and canned tomatoes with chilies, bring to a simmer, then cover and reduce heat to low.
  6. Simmer covered for 18 to 20 minutes, until rice is tender.
  7. Remove lid, sprinkle cheese on top, cover briefly until cheese melts. Garnish with parsley and serve.

Notes

If rice seems undercooked, add 1/4 cup hot broth and continue covered for 3 to 5 minutes.
