Cattle Drive Casserole

A classic, layered Tex-Mex casserole featuring seasoned ground beef, a creamy sour cream layer, salsa, cheese, and a biscuit base.

  • 1 lb (450 g) ground beef
  • 2 cups (about 240 g) biscuit mix
  • 2/3 cup (160 ml) water
  • 1 cup (150 g) chopped onion
  • 1/2 cup (75 g) chopped red bell pepper
  • 2 tbsp taco seasoning
  • 1 cup (240 g) sour cream
  • 1/4 cup (60 g) mayonnaise
  • 4 oz (113 g) drained green chiles
  • 1 3/4 cups (210 g) shredded cheese
  • 1/2 tsp garlic powder
  • 1/2 cup (120 ml) salsa

Instructions

  1. Preheat the oven to 350℉.
  2. In a skillet, cook the ground beef over medium-high heat until no longer pink, then drain the excess fat.
  3. Combine the biscuit mix and water in a mixing bowl, then press into a greased 9×13 in (23×33 cm) casserole dish and bake for 5-8 minutes until lightly golden.
  4. Add chopped onion and bell pepper to the cooked beef and sauté for 4 minutes, then stir in taco seasoning.
  5. Spread the beef mixture over the baked biscuit layer.
  6. In a bowl, mix sour cream, mayonnaise, green chiles, shredded cheese, and garlic powder; spread over the beef layer.
  7. Add dollops of salsa on top of the sour cream layer and sprinkle the remaining cheese over everything.
  8. Bake uncovered at 350℉ for 30 minutes until hot and bubbly.

Notes

Store cooled casserole in an airtight container for up to 4 days or freeze portions for up to 3 months. Reheat covered in a 350℉ oven until internal temp reaches 165℉.
