A quick and flavorful weeknight meal combining spicy, smoky sausage with creamy pasta.

  • 8 oz penne pasta
  • 12 oz Cajun sausage (Andouille or smoked), sliced
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning, plus extra to taste
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the sliced Cajun sausage and cook until browned (about 5-7 minutes).
  3. Add the chopped onion and bell peppers to the skillet, sautéing for an additional 5 minutes until softened.
  4. Stir in the minced garlic and cook for one minute until fragrant.
  5. Pour in heavy cream and sprinkle with Cajun seasoning. Stir well and simmer for about five minutes until slightly thickened.
  6. Add the cooked pasta to the skillet and toss to coat evenly with the sauce. Serve hot.
