A creamy pasta dish that combines smoked sausage, Cajun seasoning, and vegetables for a rich and spicy weeknight meal.

Ingredients

  • 8 oz pasta of choice (penne, rigatoni), dry
  • 1 lb smoked sausage, sliced (kielbasa or andouille)
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream (240 ml)
  • 1 cup shredded cheese (cheddar or pepper jack), ~100 g
  • 1 cup bell peppers, diced (~150 g)
  • 1 cup onion, diced (~150 g)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 to 2 tablespoons olive oil

Instructions

  1. Cook the pasta according to package instructions, drain and set aside.
  2. In a large pot, heat olive oil over medium heat, add the sliced sausage and cook until browned.
  3. Add the diced onion, bell peppers, and garlic, sauté until vegetables are tender.
  4. Stir in the Cajun seasoning and cook for another minute.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add the cooked pasta and cheese, stirring until the cheese is melted and mixture is combined.
  7. Season with salt and pepper to taste.
  8. Serve warm and enjoy.

Notes

For a lighter option, swap heavy cream for half-and-half, but expect a thinner sauce.
