A quick and flavorful one-pan dish featuring smoked sausage, rice, bell peppers, and Cajun seasoning.

Ingredients

  • 300 g smoked sausage, sliced
  • 200 g long-grain white rice
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 700 mL chicken broth
  • 2 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, add olive oil and warm until shimmering.
  2. Sauté onion and garlic until fragrant, about 3 to 4 minutes.
  3. Add sliced smoked sausage and cook until browned, about 4 to 5 minutes.
  4. Stir in bell peppers and cook for 2 to 3 minutes.
  5. Add rice and Cajun seasoning, stirring to combine and toast rice for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes until rice is cooked through.
  8. Fluff with a fork and serve hot.

Notes

For variations, consider using vegetarian sausage or shrimp. Adjust cooking time and liquid according to the type of rice used.
