Ingredients

Mashed, ripe bananas

Coconut yogurt (or Greek yogurt)

Vanilla extract

Vanilla protein powder

Tapioca starch

Kosher salt

Coconut whipped cream

Gluten-free shortbread cookies

Ripe bananas (sliced)

Instructions

1. Add mashed bananas, yogurt, vanilla, protein powder, tapioca starch, and salt to a blender.

2. Blend until smooth and fluffy.

3. Chill mixture in fridge for 4 hours.

4. Layer pudding with cookies, banana slices, and whipped cream.
