Juicy boneless skinless chicken thighs baked in the oven at 400°F for 30 minutes with bold spices like smoked paprika, garlic powder, and cumin. Fast, flavorful, and perfect for weeknights.
2 pounds boneless skinless chicken thighs
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt (or ½ tsp of any other salt)
¼ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1. Preheat the oven to 400°F. Place the chicken thighs in a large bowl.
2. Add the olive oil and spices. Use your hands to coat the chicken.
3. Arrange the seasoned thighs in a single layer on a rimmed baking dish.
4. Brush any remaining oil/spice mix over the chicken.
5. Bake until thighs are cooked through and reach an internal temp of 165ºF, about 30 minutes.
6. Let rest 5 minutes before serving.
If the thighs vary in size, cook until the largest is done.
Smoked paprika adds essential flavor — don’t skip it!
Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
Reheat gently to prevent drying out, either in the microwave at 50% power or in a 350°F oven.
