These Bloody Beet Hummus Cups are the perfect spooky, nutritious appetizer for Halloween parties. Vibrant, healthy, and ghoulishly delicious!
3 large roasted beets (or 2 cups pre-cooked beets)
1 can (15 oz) chickpeas, drained and rinsed
3 tbsp tahini or sunflower seed butter
2 cloves fresh garlic, minced
3 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
1 tsp ground cumin
½ tsp salt (or to taste)
2–3 tbsp cold water
24 small plastic shot glasses or mini cups
Fresh herbs for garnish (parsley, microgreens, chives)
Pita chips or vegetable sticks for dipping
1. Preheat oven to 400°F (200°C). Wrap beets in foil with olive oil and salt. Roast for 45–60 mins until tender. Cool, peel, chop.
2. Add roasted beets, chickpeas, tahini, garlic, and lemon juice to a food processor. Blend for 30 seconds.
3. While blending, slowly drizzle in olive oil and cold water. Add cumin and salt. Process until creamy but thick.
4. Taste and adjust salt, lemon juice, or garlic. Add more beet or natural red food coloring for deeper color.
5. Fill each shot glass ¾ full with the beet hummus. Wipe rims clean for neat presentation.
6. Garnish with herbs or a drizzle of oil. Serve with pita chips or veggie sticks. Chill if preparing ahead.
Substitute tahini with seed butter for a nut-free version.
Use cannellini beans instead of chickpeas if desired.
