Beef Enchilada Casserole

A delicious and hearty layered dish combining seasoned ground beef, tortillas, salsa, and gooey cheese, perfect for family dinners.

  • 1 cup long-grain white rice
  • 2 Tbsp. olive oil
  • 1 1/2 lb. ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 (4-oz.) cans diced green chiles
  • 2 tsp. ground cumin
  • 2 tsp. paprika
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 large tomato, chopped
  • 1 cup corn kernels (thawed if frozen)
  • 1 (16-oz.) jar salsa verde
  • 12 small corn tortillas
  • 3 cups grated sharp cheddar cheese (about 12 ounces)
  • 2 (10-oz.) cans enchilada sauce
  • 1/2 cup chopped black olives
  • 3 scallions, thinly sliced
  • Sour cream, for serving

Instructions

  1. Cook the rice according to the package directions. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the beef, onion, and garlic; cook until the beef is browned (about 4 to 6 minutes). Drain excess fat, then add chiles, cumin, paprika, salt, and pepper, stirring to combine.
  3. Add the chopped tomato and 1 cup of water; simmer gently until reduced by half (about 2 minutes). Remove from heat and stir in the corn.
  4. Preheat your oven to 375°F (190°C). Spread 1 cup of salsa verde in the bottom of a 9×13-inch baking dish.
  5. Layer half of the tortillas over the salsa, overlapping their edges. Spoon the rice over the tortillas.
  6. Add the beef mixture, sprinkling half of the cheese on top. Drizzle with half of the enchilada sauce.
  7. Place the remaining tortillas on top, followed by the rest of the salsa and enchilada sauce. Finish with the remaining cheese.
  8. Cover the casserole with foil, making sure it does not touch the cheese, and place it on a rimmed baking sheet. Bake for 20 minutes.
  9. Uncover and continue baking until bubbly and hot (about 20 minutes more).
  10. Switch your oven to broil and broil until golden on top (approximately 5 minutes).
  11. Allow the dish to rest for at least 10 minutes, then garnish with olives and scallions. Serve with sour cream.

Notes

For a vegetarian version, substitute beef with black beans or lentils. Ensure to rest the casserole for better texture.
