A flavorful dish combining tender chicken, fluffy rice, and colorful veggies drizzled with a creamy, spicy sauce.

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to package instructions.
  2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat, then add chicken and cook until golden-brown.
  4. In a bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice to make the sauce.
  5. Once the chicken is cooked, toss in mixed vegetables and cook for 2-3 more minutes.
  6. Pour the sauce over chicken and veggies, stir well, and serve over rice.

Notes

Can use grilled tofu or chickpeas for a vegetarian version. Adjust the amount of sriracha for desired spice level.
