A nutritious take on the classic banana bread, perfect for healthy eating without sacrificing flavor.

Ingredients

  • 3 ripe bananas
  • 1/3 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 cup oat flour or almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas.
  3. Add the Greek yogurt and honey (or maple syrup) and mix until smooth.
  4. In another bowl, combine oat flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the banana mixture and stir until just combined.
  6. If using, fold in walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 45-55 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

Notes

For extra sweetness, ripe bananas can be used. Serve with a spread of almond butter for added protein.
