A simple yet delicious dish featuring chicken breast topped with a crispy Parmesan breadcrumb mixture, perfect for weeknight dinners.

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup zucchini slices
  • 1 cup yellow squash, sliced
  • 1 cup grape tomatoes

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Cut chicken breasts into thinner filets and season both sides with salt and pepper.
  3. In a shallow bowl, mix olive oil and minced garlic.
  4. In another dish, combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  5. Dip each chicken filet in the olive oil mixture, then coat with the breadcrumb mixture.
  6. Place chicken on the baking sheet and bake for 8 minutes.
  7. Flip each piece and bake for an additional 5 to 10 minutes, until the internal temperature reaches 165°F.
  8. Let the chicken rest before serving.
  9. For the veggies, combine zucchini, yellow squash, grape tomatoes, olive oil, minced garlic, salt, and pepper in a bowl.
  10. Spread the veggie mixture on a separate baking sheet and roast for 10 to 12 minutes.

Notes

For gluten-free, use gluten-free breadcrumbs. For added spice, mix in red pepper flakes.
