Authentic Mexican Rice

A classic staple of Mexican cuisine, this fluffy and vibrant Mexican Rice (Red Rice) complements a range of entrees and is easy to prepare.

Ingredients

  • 1 1/2 cups Mahatma® Rice Extra Long Grain White Rice
  • 3 tbsp neutral oil
  • 1/4 onion (diced)
  • 1 garlic clove (crushed)
  • 1 tbsp Knorr chicken bouillon
  • 1/2 tsp garlic powder
  • 2 roma tomatoes (approximately 8 oz tomato juice)
  • 2 cups hot water
  • 1/4 tsp salt (or to taste)
  • 3 sprigs cilantro
  • 1 jalapeno

Instructions

  1. Heat the oil in a heavy-bottomed or non-stick pan over medium heat until shimmering.
  2. Add diced onions and crushed garlic, sauté until lightly browned.
  3. Remove the fried garlic and set aside.
  4. Add the rice, continuously stirring for about 5 minutes until it becomes golden brown.
  5. Stir in Knorr chicken bouillon and garlic powder, toasting for an additional minute.
  6. Blend roma tomatoes and fried garlic until smooth to create about 8 oz of tomato sauce.
  7. Add the tomato sauce to the rice, stirring constantly for 30 seconds.
  8. Pour in hot water, stirring in salt to taste.
  9. Place cilantro and jalapeno on top without stirring, then reduce heat.
  10. Cover and simmer on low for 20 minutes without lifting the lid.
  11. After 20 minutes, turn off the heat and fluff the rice with a fork.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
