A delicious and wholesome breakfast option combining rolled oats, apples, and cinnamon, baked to perfection for a warm and satisfying start to your day.

Ingredients

  • 2 cups rolled old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups non-dairy milk (or regular milk)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 tablespoon ground flaxseed
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup diced apple, divided
  • 1/2 cup raisins

Instructions

  1. Preheat Oven: Set your oven to 375°F.
  2. Mix Ingredients: In a large bowl, combine oats, cinnamon, baking powder, sea salt, non-dairy milk, applesauce, maple syrup, flaxseed, coconut oil, and vanilla.
  3. Add Apples and Raisins: Fold in the raisins and 3/4 cup of the diced apples gently.
  4. Prepare Baking Dish: Pour the mixture into a greased 8×8 baking dish and top with the remaining 1/4 cup of diced apples.
  5. Bake: Place in the oven for about 40 minutes or until center is set and a toothpick comes out clean.
  6. Serve: Allow to cool slightly before serving.
  7. Store Leftovers: Keep in an airtight container in the refrigerator for up to 4 days.
