  • 3 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1 tablespoon chipotle sauce (or 2 finely chopped chipotles in adobo sauce)
  • ½ teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 15 corn tortillas
  • 2 cups shredded Mexican blend cheese
  • Cooking spray (olive or avocado oil)

Instructions

  1. Mix: Combine shredded chicken, cream cheese, chipotle sauce, salt, cumin, smoked paprika, and garlic powder in a bowl until well combined.
  2. Warm: Microwave tortillas with a damp towel for 30 seconds to make them pliable.
  3. Fill and Roll: Place 2 tablespoons of filling and some shredded cheese on each tortilla, roll tightly, and place seam-side down in the air fryer basket.
  4. Preheat: Set air fryer to 400°F and spray taquitos with cooking spray.
  5. Cook: Air fry for 5 minutes, flip, spray again, and cook for another 2 minutes or until crispy.
  6. Serve: Enjoy immediately with your favorite toppings like queso fresco, guacamole, and salsa.
