A moist and rich chocolate chip zucchini bread that combines finely grated zucchini and dark chocolate chips for a delicious summer quick bread.

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely grated zucchini
  • 1 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, sugars, oil, and vanilla until smooth.
  4. Gradually add dry ingredients to the wet mix, stirring until just combined.
  5. Gently fold in grated zucchini and chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes until a toothpick inserted comes out clean. Allow to cool before slicing.

Notes

For variations, consider using half whole wheat flour or adding nuts for added texture.
